Pink Nasi Lemak Preparation Steps

Pink Nasi Lemak Recipe

Servings: Serves 4-6
Total Time: 1 hour 20 minutes

Ingredients:

  • For the Pink Rice:
    • 4 cups White Jasmine Rice (150ml), rinsed
    • 1 packet of 250ml Fresh Coconut Milk
    • 650ml Room Temperature Water
    • 3 Shallots, thinly sliced
    • 2 inches Galangal, remove skin and cut into pieces
    • 1 stalk Lemongrass, bruised
    • 3 Pandan Leaves, knotted
    • 1 tsp Salt
    • ½ cube of Chicken Stock
    • ½ tbsp Pink Food Colouring
  • Fried Chicken:
    • 6 pieces Chicken Wings
    • 1.5 tsp Turmeric Powder
    • 1.5 tsp Salt
    • 1 tsp White Pepper Powder
    • 3 tbsp Cornflour
  • Omelette:
    • 3 Eggs
    • ½ tsp Salt
  • Condiments:
    • Roasted Peanuts
    • Fried Anchovies
    • Sliced Cucumbers
    • Ready-made Nasi Lemak Chilli

Preparation Steps:

Step 1: Prepare the Pink Rice

  1. Rinse the white jasmine rice until the water runs clear.
  2. Heat 1 tbsp oil in a frying pan, and fry the shallots and galangal until fragrant.
  3. Add in lemongrass and knotted pandan leaves, and fry briefly.
  4. Add in rice, and fry evenly to coat with the aromatics.
  5. Add in water, coconut milk, salt, chicken stock, and pink food colouring. Mix well until the chicken stock has fully dissolved.
  6. Transfer the rice into a rice cooker and cook it on white rice mode.
  7. Once the rice is cooked, fluff with a fork briefly. Cover the lid and keep warm.

Step 2: Prepare and Deep Fry the Chicken

  1. Season the chicken wings with salt, turmeric powder, and pepper. Mix well and marinate for an hour. *You may use this time to prepare the omelette.
  2. Prepare the wok for deep frying. Coat the chicken wings evenly with some corn flour to give them extra crispiness.
  3. To test the temperature of the oil, dip a wooden chopstick in the middle. Once the oil starts to bubble around the chopstick, you may proceed to place the coated chicken wings in one by one carefully.

PRO TIP If the oil starts to smoke, turn off the heat for a while to let it cool down. If the chicken wings are placed in smoked oil, the skin gets burnt very quickly and the meat will not be cooked through.

Step 3: Prepare the Omelette

  1. In a bowl, beat 3 eggs with ½ tsp salt.
  2. Heat up the pan with 1 tsp oil, and add in the egg mixture. Cook until both sides are golden brown.

Step 4: Assemble the Nasi Lemak and Serve

  1. Place a portion of pink rice on the serving plate.
  2. Arrange the fried chicken, omelette, cucumber slices, roasted peanuts, and fried anchovies around the rice.
  3. Add a generous spoonful of sambal on the side.
